Chocolate Cherry Blondies
The sweet and tart cherries pair so well with the chocolate, it is a winner every time.

1 cup (154g) pitted Washington cherries
1 cup (128g) Cascade Milling Organic All-Purpose Flour
1 cup (192g) light brown sugar
¼ tsp (1.5g) salt
½ cup (113g) unsalted butter, melted
1 large egg
2 tsp vanilla extract
1 cup (30g) semi-sweet chocolate chips

1. Preheat the oven to medium heat (350°F or 190°C). Spray or butter generously in an 8 by 8-inch pan.
2. In a bowl, whisk the melted butter with the sugar.
3. Add the egg, vanilla extract. Mix well before stirring in the Cascade Milling Organic All-Purpose flour with salt.
4. Fold in the chocolate chips and the cherries. Do not overmix.
5. Pour the fruity batter into the greased pan. Spread in evenly if needed.
6. Bake for 30min or until the center is set. You will also notice the darker corners, pulling away.
7. Let the blondies cool down for at least 30min before serving.
8. Serve with fresh berries and sprinkled with powdered sugar and sliced almonds.
Tips:
- Use frozen cherries they are not in season
- Other stone fruits (peaches, plums) can be used. Chopped apricots make a unique blondie.
- The bars can freeze well for 3 months in an airtight container.
