Bring in the New Year with this spiced honey cake.

Makes 8-10 servings

  • 1 ¾ cups (224g) Cascade Milling organic all-purpose flour

    1 ¾ cups (245g) Cascade Milling organic whole-wheat flour

    1 Tbsp (14g) baking powder

    1 tsp (5g) baking soda

    ½ tsp (3g) salt

    6 tsp (16g) cinnamon

    ½ tsp (1g) ground cloves

    ½ tsp (3g) ground allspice

    1 cup (218g) vegetable oil

    ½ cup (169g) honey

    1 cup (200g) granulated sugar

    ½ cup (72g) brown sugar

    3 (150g) large eggs

    1 tsp (4g) vanilla extract

    1 cup (238g) cooled coffee

    ½ cup (124g) fresh orange juice

    ¼ cup (27g) whisky

    Sliced almonds for topping

  • Preheat your oven to 350°F. Lightly grease a 9-by-13-inch sheet pan and line with parchment paper.

    In a large mixing bowl, whisk the Cascade Milling All-Purpose flour, baking powder, baking soda, salt, and spices together. Make a well in the center add the honey, oil, sugars, eggs, vanilla, coffee, orange juice, and whisky.

    Gently combine the ingredients together until no dry spots remain, using an electric mixer or by hand. Pour the batter into your pan and sprinkle the top of the batter with the optional sliced almonds. Bake for 40-45 minutes or until an inserted toothpick comes out clean.

    Leave to cool for at least 15 minutes and enjoy.
